Sushi rice is best made in a rice steamer, but with attention you can make good rice in a pot onthe stove.
5 cups sushi rice
5 cups water
1 inch piece kombu, optional
1/2 cup sake, optional
Place rice in a large bowl and cover with water (not the 5 cups).
Swish rice with our hands and drain. Repeat process twice. Drain rice in a colander for about 30 minutes. IN A RICE STEAMER, place rice, water and kombu if using in the steamer. Turn it on.
